This is another famous recipe from brinjals, one can either stuff them with aromatic corriander stuffing or it can be prepared like a curry by cutting them into pieces. This is a simple yet delicious and aromatic curry as it is loaded with lots of corriander. Enjoy preparing this dish.

Oil | 5 table spoons |
Corriander leaves | 2 cups |
Green chillies | 4 or 5 pieces |
Tamarind paste | 2 tea spoons |
All purpose flour | 1/2 table spoon |
Take a pan and add oil. After the oil is sufficiantly hot add brinjals, salt, turmeric. Sprinkle little water and cover the pan with a lid. Leave it for five to six minutes until brinjals become soft. Add turmeric paste to it. Now make a paste of corriander leaves and green chillies. Add the paste to the curry. Leave for two minutes and sprinkle all purpose flour to it. This is done to give a nice texture to the curry. Enjoy this dish with hot rice.
